A perfect breakfast before a good work out! Here’s how you can make an egg & veggie scramble filled with protein and hearty vegtables.
Ingredients:
½ tablespoon of your oil of choice (Avocado, coconut, EVOO)
1 cup of fresh or frozen vegetables of your choice (we like mushrooms, spinach, peppers, onions)
2-3 eggs, beaten
Salt and pepper to taste
Instructions:
- Add oil to skillet and turn heat to medium
- Add veggies to skillet and cook until crisp on the bottom
- Add eggs, salt and pepper. Stir so the eggs don’t burn or get stuck to pan
- As soon as the eggs have set, remove pan from heat
- Breakfast is served!
