Egg & Veggie Scramble

This breakfast is rich in protein and filled with tasty hearty vegetables. A perfect breakfast before a good workout. 

Ingredients:

½ tablespoon of your oil of choice (Avocado, coconut, EVOO)

1 cup of fresh or frozen vegetables of your choice (we like mushrooms, spinach, peppers, onions)

2-3 eggs, beaten

Salt and pepper to taste

Instructions:

  1. Add oil to skillet and turn heat to medium
  2. Add veggies to skillet and cook until crisp on the bottom
  3. Add eggs, salt and pepper. Stir so the eggs don’t burn or get stuck to pan
  4. As soon as the eggs have set, remove pan from heat
  5. Breakfast is served!
