Overnight Chia Pudding

A great alternative to overnight oats, chia pudding is lower in carbs without skimping on the taste. The tiny chia seeds, which are rich in fiber, will absorb the liquid and swell overnight to form a jelly-like texture.

Ingredients:

2 tablespoons chia seeds

¾ cup unsweetened milk of your choice (we like almond or oat)

1 teaspoon of your preferred sweetener (liquid stevia, monk fruit, etc.)

Berries for topping (we like blueberries, raspberries, and blackberries)

Instructions:

  1. In a lidded jar, such as a mason jar, combine chia seeds, milk, and sweetener
  2. Put the lid on and place in refrigerator overnight 
  3. The next morning, top with berries and enjoy!
